Homemade (Vegan) Dark Chocolate

We’ve had a few cloudy days around here. Not a huge fan of cloudy days. Never mind not being able to run for 3 days and I’m going a bit crazy!

What else is there to do though but eat chocolate on a gloomy day ? The only chocolate in the house was cheap white chocolate wannabe M and M’s, with lots of icky colors and stuff added… not going to cut it today.

I had made this recipe before, which inspired me to make my own version, reducing the oil.

Homemade (Vegan) Dark Chocolate

3 Tablespoons Coconut oil

6 Tablespoons cocoa

1 Tablespoon agave (Honey works really well too for non-vegan)

few drops vanilla

Microwave the coconut oil 20- 40 seconds, checking every 10 seconds, just till soft. (Don’t use other types of oil unless you want liquid chocolate – coconut is solid at room temperature.)

Stir in cocoa, agave and vanilla.

Pour onto a small plate covered with plastic wrap. (Ensure your mix is not hot – don’t want melted plastic in there!)

Allow to set in the fridge, about 20 minutes, then break into pieces and try not to eat it all!

I’m imagining toasted almonds in there next time, or dried blueberries… yum!

So about not being able to run… Looks like ITB problems on my right side so I am taking all the Google advice out there and allowing for rest. Seeing as my regular life calls for walking up and down hills for an average of 2 hours a day, I can’t afford to be in pain! Maybe Dr. Internet Search is not the most recommended method, but I don’t have access to massage therapists and sports pros around here. Running blogs have been a goldmine of help and encouragement! Thank you to all of you who post about all things running!!!

The last few days, instead of running, I’ve been reuniting with Jillian’s 30 Day Shred and enjoying it, as well as lots of stretching and foam rolling. I have to make sure to keep strength training and stretching even when things feel better, so easy to neglect it when you feel fine!

Today seems knee pain free, yippee! So I’m giving it a couple more days and foam rolling every day, and hopefully will be back running on Monday. Next week is a cut back week mileage wise and then back to the plan.

I’ve made a list of all the 1/2 and full marathons I might be able to do this summer. It’s so tricky not knowing what the summer holds for us! Really would like to know, I’m quite the planner, love to have huge goals to look forward to then mull over the details in between.

In the mean time will enjoy the beautiful things here. Here’s a few pics from the 2 minutes the sun was out today from our garden.

No, of course I had nothing to do with their growing. Am completely lacking skill in the flower department. Guess I can’t complain about clouds when these flowers are out in January hey?

    i took a chocolate making course at a vegan restaurant/food store awhile ago. i’m not a huge fan of dark chocolate… but they taught us how to do cool things like mix it with avocado etc… to make different home-made chocolate concoctions. it’s really a shame that i’m so lazy. i admire you folks making your chocolate at home!
