Hope everyone had a great weekend! We had fun with friends and too much good food! Still eating BBQ leftovers but getting creative with them.
Aside from the
boring regular grilled meats, we had more than enough vegan goodness…
- Brown Rice Veggie burgers – they were a huge hit!
- Spinach salad with strawberries and almonds
- green salad (from Loo’s garden)
- Quinoa salad with beans, dates, and nuts
- Marty’s famous hummus
- fresh corn
- baked potatoes
Tons of stuff to keep the vegetarians happy! Then of course tons of watermelon, strawberry shortcakes, and awesome brownies. I used the No Meat Athlete Black Bean Brownie recipe and everyone loved them.
I made a few modifications – white flour (to be more of a crowd pleaser), half carob power half cocoa, walnuts instead of hazelnuts, and a handful of carob chips on top. I also used dried black beans that I pressure cooked instead of canned ones.They turned out so moist and fudgy and delish. Better not make them again any time soon!!!! Too good to have in the house.
Loo’s garden is growing like crazy… hopefully she hasn’t missed the handfuls of greens that disappear as I walk by…

I also got in a couple of super sweat fest runs in the heat, yikes! We had 6 of us running the last time, think we should all get matching shirts soon! Its amazing how many other friends have thought about running now that we have a regular crew, its awesome having everyone out and ready to run.
Tomorrow is fun in the city with mum and a hair cut, any ideas? Will post a pic tomorrow!
