After experimenting with Amaranth and finding it very nutritious but gummy, along with a Veggie burger request, an idea was born. I decided to give it a try and share it with you!
Almond Amaranth Patties
- 1/4 cup chopped almonds
- 2 garlic cloves, finely chopped
- 1/8 cup onion, finely chopped
- olive oil, for frying
- 1 cup amaranth
- 1 teaspoon oregano
- 1 1/2 teaspoons red pepper flakes
- 1 teaspoon basil
- 1 teaspoon ground cumin
- 1 teaspoon onion powder
- 1/4 cup sunflower seeds
- sea salt and pepper
First, cook the amaranth. 1 cup of amaranth to 3 cups water. Bring to a boil, then cover and simmer on low heat for 25 minutes.
Gently fry the garlic and chopped onion until fragrant, add the almonds. Allow almonds to brown a little, being careful not to burn them.
Add the almond mixture to the cooked amaranth. Add spices and seeds and mix well.
Make sure the mixture is cool enough to handle. Form into 8 patties and fry them in a little oil until lightly browned. The patties will keep their shape well and can be flattened a little while in the pan.
This recipe has a mild flavor and can be paired with interesting sauces. Maybe a nice dijon mustard, mango salsa, or pesto mayo. I enjoyed mine with roasted red peppers, red onion, and mustard. They would easily work with a green salad instead of a bun as they are quite filling. Best of all, they are really easy to make!
