Chocolate Oat Breakfast Bake


I was looking for some new healthy breakfast recipes and came across a Buckwheat bake on the Edible Perspective. I made a few modifications and increased the protein and love how this turned out! It cooks in under 2 mins in the microwave and so can even be a last minute treat.

Chocolate Oat Breakfast Bake

  • 1 tbsp ground flax
  • 2.5 tbsp water
  • 2 tbsp vanilla soy milk
  • 1/2 banana
  • 1 tbsp protein powder
  • 1/4 cup oats
  • 1 tbsp cocoa
  • 1/4 tsp cinnamon
  • 1/4 tsp baking soda
  • 1/4 tsp stevia

First combine the flax and water, set aside.

In a microwave safe bowl mash the banana well and add in soy milk, protein, oats, cocoa, cinnamon, baking soda and stevia until well combined.

Add in flax mix. Blend well.

Cover with paper towel and microwave for 1 min 45 secs until soft and cake-like.

Top with peanut butter, coconut, nuts, maple syrup, whatever you fancy!

I was so excited to make this, I admit I had it for supper! If you prefer it sweeter 1  tbsp syrup can be added to the batter.

These are the modifications I made:

  • Used oats in place if buckwheat flour
  • Added protein powder instead of chia seeds
  • Vanilla soy milk in place of unsweetened almond milk
  • Omitted the syrup and flavorings
  • Added a touch of stevia for sweetness

You can eat this right out of the bowl (with a spoon on course 😉 ), though if you prefer it as more of a cake, lightly grease the bowl first and then invert onto a plate.

The flax and water mix is used often in vegan recipes as an egg substitute and works really well. I’ve also used 1/2 a soft banana in baking many times instead of an egg, though of course it adds some banana-ness to the recipe! This breakfast bake though will be a regular for me.

My calculations (before toppings!) have this at around 285 calories and best of all 24 grams of protein, yay! Of course that will vary a bit due to the protein powder you use, mine has 15g per scoop.


You might have noticed the classy spoon in the first pic, we had been making good use of our teeny camping cutlery for months, until some lovely friends gave us the nice grown-up black set for our anniversary, thanks guys!
